This is a versatile dip that's inspired by the traditional   satay sauces of Malaysia. It's best served with chopped up carrots, cucumber, beetroot, red onions, beans, tofu or celery. It can also be used as a salad dressing for a crunchy cabbage, cucumber, boiled egg and noodle salad.
This sauce also makes for a delicious condiment to grilled fish or meat. The quantities are a rough guide and as with all sauces, feel free to adjust the individual ingredients according to taste.

Ingredients:

1 cup organic crunchy peanut butter
1/2 cup water
1 tablespoon soy sauce
1/2 tablespoon  brown sugar 
1/4 teaspoon salt
1/4 cup oil
1 tbsp lime juice/lemon juice/ tamarind juice  

Spice paste:

2 red chilies (adjust according to taste)
3 cloves garlic
3 shallots
2 lemon grass
1 inch ginger/galangal
1 tablespoon coriander powder (optional)

1. Blend the spice paste ingredients.

2. Heat oil and saute the spice paste until the aroma is released.

3. Add the peanut butter, lime, water, sugar, soy sauce and mix thoroughly. Simmer in low heat while continue stirring  and adding just enough water to achieve a dip or salad dressing consistency.

*optional garnish - coriander, dried chilli flakes
